Where this number comes from

Most of our weights are the King Arthur Baking chart figure, unchanged. This one is not, and it is worth saying why: Measured kitchen references cluster at 4.4–5.0 g/tsp. King Arthur's chart implies 6 g/tsp because it rounds ½ tsp = 1/10 oz (2.83 g) up to 3 g, and that rounding doubles.

We would rather publish the number your scale will agree with and show our reasoning than quote a familiar chart that rounds the physics away. Every value we don't depart on is locked to the chart by a test, so this list stays short and deliberate — you can read all of them on the methodology page.

Why the measuring method matters

The 230 g figure assumes baking soda measured 4.8 g per tsp. Volume measurement is sensitive to how the cup is filled — packing or scooping changes how much fits, which is why the same "1 cup" can vary noticeably between two bakers. A scale removes the variable entirely, and it is the reason professional recipes are written in weight.

Frequently Asked Questions

How many grams is 1 cup of baking soda?

One US cup of baking soda weighs 230 grams (about 8.11 ounces), measured 4.8 g per tsp. Measured kitchen references cluster at 4.4–5.0 g/tsp. King Arthur's chart implies 6 g/tsp because it rounds ½ tsp = 1/10 oz (2.83 g) up to 3 g, and that rounding doubles. We publish the reason rather than the chart figure because it is what your scale will actually read.

How many grams is a tablespoon of baking soda?

A tablespoon of baking soda is about 14 grams, since one cup holds 16 tablespoons. A teaspoon is about 4.8 grams.

How many cups is 250 g of baking soda?

250 grams of baking soda is about 1⅛ cups (250 ÷ 230). Weighing is more reliable than measuring by cup, because how you fill the cup changes the amount.

Does how I measure baking soda change the weight?

Yes — this figure assumes 4.8 g per tsp. Scooping straight from the bag compacts baking soda and can add a noticeable amount of extra weight per cup, which is exactly why recipes written in grams are more repeatable.
