The fan column follows the standard 20°C reduction: convection ovens move hot air across the food, so they cook as if they were running hotter. If a recipe was written for a fan oven and you only have a conventional one, go the other way — add 20°C — and expect a slightly longer bake. Changing pan size shifts bake time and temperature too — the cake pan converter works both out from batter depth.

How accurate is your oven, really?

Most home ovens swing ±25°F around the set point as the thermostat cycles, and many run permanently hot or cold from the factory. That's a bigger error than any conversion rounding in the chart above. An inexpensive standalone oven thermometer, placed on the middle rack where the food sits, tells you your oven's true story — and remember that opening the door drops the temperature 25–50°F each time.

How do I convert a recipe for a fan (convection) oven?

Reduce the conventional temperature by about 20°C (25–30°F), or keep the temperature and shorten the bake time by roughly 25%. Fan ovens circulate hot air, which transfers heat faster than still air.

What temperature is gas mark 4?

Gas mark 4 is 350°F / 180°C — a moderate oven. Each gas mark step changes the temperature by 25°F: gas mark 5 is 375°F, gas mark 6 is 400°F, and so on.

Why do recipes say 180°C but my conversion gives 177°C?

The exact conversion of 350°F is 176.7°C, but ovens can't hold a temperature that precisely, so recipe writers round to the nearest 5 or 10 degrees. 177°C and 180°C are interchangeable in practice.

How do I convert an oven recipe for an air fryer?

Drop the temperature by about 25°F (15–20°C) and start checking at 20% less time — an air fryer is a small, aggressive convection oven. A cake recipe at 350°F conventional runs around 320°F in an air fryer, checked early.

Is it OK to bake at a slightly different temperature than the recipe says?

Within about 10°F / 5°C, yes — home ovens routinely swing more than that during a bake. Larger deviations change browning and rise: hotter sets the crust early and can dome cakes; cooler flattens and dries them. An inexpensive oven thermometer is the best upgrade most bakers can make.
